Kimchi truck!

They say that to make a “staycation” worthwhile, you should visit things in your city that you don’t normal see. For the Chunder household, that means food. With Nikola at school and Alton attending guinea pig school on Wednesdays, we took the opportunity to check out one of the food trucks we’ve only had the chance to sample once before: Marination Mobile.

Imagine a Korean-influenced Hawaiian-style taco-truck and that is Marination. Kalbi with cabbage with a squirt of lime on a corn tortilla? Out of this world. Grilled quesadilla stuffed with kimchi and kalua pork? Astounding. It was worth making the trip to West Seattle the first time we tried the truck that was voted “Best Food Cart in the Country” (at least by Good Morning America) in 2009. Apparently, they are in Fremont every Wednesday from 11-2pm, right outside of the Theo chocolate factory (the olfactory fusion of chocolate and Korean BBQ nearly made my brain melt).

    Mmmm. I’m jealous. Maybe we’ll have to make a trip when we come visit in December.

    Yes, we can see. They are in West Seattle on Saturdays and closed on Sundays, so that might be out. However, the next time that we have Korean restaurant leftovers (or try to make our own kalbi), perhaps I’ll experiment with my own!
